It has been a very busy week. With Christmas shopping, cleaning the house, decorating for Christmas, taking care of my boys, and finals week at school it has been a long race to the finish line. Yet, the race is not over. I have been de-stressing in my favorite way, Baking.

So continues on our baking/ cooking comfort food for the holidays. This recipe is super easy to put together last minute and it tastes great. I heard of this recipe from the Baking and Pastry area at my college. It is AMAZING!

These are the perfect compliment to any cup of coffee or hot cocoa. Try them out and share them with your friends and loved ones.

Chocolate Vanilla Meltaways

17 ounces of White Chocolate chips, melted

5 ounces of melted, coconut oil

4 -5 drops of vanilla extract

Powdered sugar for coating

Directions:

Combine all of the ingredients and pour them into a parchment lined baking pan. Let the mixtures set for at least 3 hours.

Cut and roll in powdered sugar. Makes around 60 pieces. Enjoy!

* To better make a straight cut, use a large cutting knife and slice as much at a time as possible quickly to lessen the chance of breakage.

* For a faster melting effect, the higher cocoa butter percentage content the faster the meltaways will melt.
